Classic Cucumber Collins with Spindrift

There really isn't anything more refreshing after a long work week than an ice-cold cocktail. Kev and I have made it a treat to enjoy a new cocktail (either classic or craft) on Friday evenings. As if my insta-stories weren't enough of an indication Kev and I have been slightly obsessed with Spindrift® Sparkling water. They're a great alternative to carbonated water and the hint of real, freshly squeezed fruit which makes it that much more favorable! Recently the Spindrift team hooked us up with a few of their new flavors, including cucumber, which I had yet to try!
I know it may sound a bit different than the typical flavored water flavor but, it couldn't be more refreshing. I like to refer to it as a bottled spa water with just the right amount of bubbles. With date night on the horizon, I decided to add a kick to the classic collins cocktail, and replace the soda water component with Spindrifts Cucumber sparkling water, and trust me when I say it's an upgrade you won't wanna pass up! At our most recent happy hour, we enjoyed one of my favorite gin cocktails and gave it a fresh kick with the help of the cucumber sparkling water.
HOW-TO CLASSIC COLLINS
- 2 oz Gin
- 1 1/2 oz Fresh Lemon Juice
- 1 oz Simple Syrup
- 1/2 C Water
- Cucumber slices
- Lemon slices
- Spindrift Sparkling Water Cucumber
Add cucumber slices and gin to a cocktail shaker, smash with muddler. Pour simple syrup, citrus juice, and ice to shaker. Shake and strain into a tall glass filled with crushed ice. Top with Spindrift® Cucumber sparkling water, and garnish with cucumber and lemon slices.
