I hope you all had an amazing weekend! Today I'll be sharing one of my favorite takes on chicken salad. I'm a huge fan of Ina Garten's recipe (seen here) but, can't always justify the extra mayo and long prep time. This take on the traditional style incorporate avocado and greek yogurt, and is just as creamy and delicious as original!
1 C Chicken Breast, Cooked & Cubed
½ C plain Greek yogurt
1/2 Avocado, Cubed
1 green onion, sliced
3 Tbsp. Black Olives, Chopped
3 Tbsp. Almonds, Toasted & Slivered
½ teaspoon garlic salt
Pepper to Taste
In a bowl combine together part 1/2 avocado and greek yogurt until smooth. Stir in green onion, almond, and olives. Next, add in measured garlic salt and pepper. Add chicken and the additional 1/2 avocado, stir until all ingredients are well combined.
Top with shaved almonds and enjoy alone or with toasted bread.
